发现了两个小问题：

they were stunned after finding out about his resignation.
se quedaron atónitos al enterarse de su dimisión.
dimisión是辞职的意思。

my mind went blank
me quedé en blanco;
有脑中一片空白的意思，指应该想起的东西想不起来了，比如考试的时候。

关于你存疑的那两个句子：
She didn't give me my money back
se quedó con mi dinero 她留下了我的钱或是她吞了我的钱。

to be left stranded (or to run aground)
quedar varado
停滞了，搁浅了的意思。你的翻译是正确的。
